Does the brain react differently to isolated workouts that are simultaneous? For example, dumbbell shoulder press or db chest press where each arm is isolated, yet worked at the same time.

Yes, doing DB/KB single arm movements gets you that added benefit from the increased demand. We have mirror neurons to help one extremity move like the other. Very beneficial with stroke or post-op rehab if someone has a hard time getting a muscle/muscle group to contract. With that said, doing alternating DB/KB presses (or any other single arm/extremity movement) with limb moving and the other stationary, bumps the benefit up another level. Again, not the end all Be all. Just another tool in the toolbox :)
