In Matthew 6:5-15, Jesus models prayer to his disciples and the crowd on the mountain. In verse 8, Jesus states that "...your Father knows what you need before you ask him." So, you are correct there on God knowing. Though, Jesus follows in his model prayer by saying "Give us this day our daily bread." (Matthew 6:11) and later asks God to "deliver us from evil" (Matt 6:13b). Both are examples, despite his previous statement, of asking for our needs. So, why would we pray? In verse 10 Jesus includes this statement in His prayer: "Your kingdom come, your will be done, on earth as it is in heaven." Perhaps the most central idea to Christian prayer is that by praying our will and desires become more like God's will and desire. So your comment has many insights, and I hope I shared a decent presentation of how we interpret the Scriptures. I'll add though that there is a prime example of the tangible power of prayer in Numbers 17 where Moses' prayer seems to cause God to relent from punishing Israel for their lack of trust and rebellious nature.
