Worked very well! One detail not mentioned here is that when you mix in the tapioca starch first, mix it until it becomes a little sticky. If needed, put it on a little heat. If you don't do that, the mixture might just turn into oobleck (Mix of solid and liquid) When it's sticky, mix in the rest of the tapioca starch

Dear, could you please also tell me Is this glutinous rice flour (like for Japanese Mochi) or just ground rice flour? And what should I do if my pandan cake is too soft, should I add more rice flour or more tapioca flour? 🙏🏽

Hello. It is not the same as Japanese sweet rice flour. They are slightly different on that since they are from different varieties of sweet rice. If it’s too soft, I would add tapioca flour that would give it more structure. But you can play with the ratios until you get your desired texture. Some versions of this dessert don’t use rice flour.

When I was a kid I would stay at a friends house some weekends and their mother was Vietnamese and would make these. I loved them so much that I would pay her $20 to make a bunch for me but over the years, I lost contact with them. It’s a fermented sausage. If you can find a culture starter, then it will quicken the process, but either way, getting the sour fermented taste is part of the profile for this sausage. If you don’t like that flavor profile, this one is probably not for you. I have a Lao sausage recipe on here that requires no drying or aging of any kind. Check that one out.

Hello. Yes. The recipe calls for cornstarch, rice flour, and glutinous/sweet rice flour, which are all gluten free. “Glutinous” rice is named for its texture and not its contents.

Hello. This process creates par cooked meatballs so that they can be used in other recipes or frozen for another time. For that initial boil, I would recommend just plain water, but after that if you want to cook the meatballs through, a broth would definitely work.
