Adam, I just found your channel and website while looking for smørrebrød recipes and love your attention to detail. I subscribed right away, but I have to admit I'm a bit saddened that you've stopped updating your channel. Well, I'll still enjoy everything here twice as I work to better understand just what you are doing and using as I don't understand Danish. Good thing Google Translate helps with your site to translate recipes. Thanks for what you've contributed to the culinary world and allowing my wife and I in Arizona to better enjoy smørrebrød 10,000km away from Denmark.

Det er en konge leverpostej og imho den absolut bedste på nettet. Den smager simpelthen af "barndom". Jeg har dog et enkelt spørgsmål til tilberedningen fra frossen tilstand. Der står tilberednings tid fra fersk. Hvor meget giver du den i ovnen og ved hvor mange grader, når du sætter den ind direkte fra frost?

Dom gånger jag skall flyga från Kastrup ser jag till att mitt flyg går på eftermiddagen av den enkla anledningen att då kan jag när jag tagit mig igenom säkerhetskontrollen gå in på Aamanns. Där blir det alltid smörrebröd, en pilsner och en lille en av dom hemkryddade. Ett av smörrebröden skall vara med hönsesalat, det är sen gammalt.

This look like a great thing for kids. They still get to choose their favourite condiments, and customize their meal. I can see how they might totally overlook the carrot just for the fact that they made their carrot hot dog their own. I think kids lean much more into customization that taste. They want to be able to play the food and experiment. They will craft hot dog that is perfect for them, with the given tools, and love it. A hot dog is a perfect medium for this. I'll try this sometime and looking forward to seeing how it tastes!

its mayo and blended/finely chopped mustard pickles.. everyone have their own set of vegs they like to use. typically red peppers, cauliflower, broccoli, onions, squash and carrots. and then they are pickled in vinegar with mustard powder, tumeric, curry powder and paprika

Hello Karol, he was explaining how the Herring had been cured to become proper "old fashioned cured herring", which is a protected name. The process in essence Is: 1. Obtain the desired quantity of fatty north atlantic herring, (Herring with about 20 percent body fat is desirable). 2. Take off the head and stomach but leave the rest (liver, heart, potential fisheggs etc.) 3.leave the prepped Herring in a sealed container to cure with salt. This creates a natural marinade of salt and the herrings own fluids, in which the fish will cure. 4.Leave for at least 6 months. The rest of the video talks about how to: Prep the now fully cured old fashioned cured herring, ( fillet it, take the skin off and leave it to de salt in water for a night in the fridge, then taste for structure and salinity. It should be slightly More salty than you'd want the finished herring to taste like at this point). He then goes on to make the marinade For the old fashioned cured and prepped Herring. Once done put the Herring in container and filly immerge it with the recently cooked but now cooled curry marinade. Close the container well and leave in the fridge for at least 3 days but ideally 7). He then further goes on to create his toppings that he uses along with sour dough rye bread, butter and the marinated Herring to assemble The finished open faced Danish sandwich, or Smørrebrød as we call in Denmark. God appetit! Ps. For a full sub i am afraid you'll have to wait for Aamans pr team to do it, but i hope this helps and answers the basics at least.

Now, I have 7kg of herring sitting in brine, set for 6 months. Self-salting of herring is not very popular in my country in this days. especially for 6 months :) When I was on Bornholm island I fall in love with Danish fish specialities. You Danes are fish masters. I'm happy I can try your recipes. Thank you!

I am sorry to say, but as delicious as it looks, it does not really work for me. The carrot is sweet and a little hard, making the combination of sweet bun (which this type of bread usually is), carrot and mayonnaise just kind of sickly sweet, and the sweet chutney and - albeit, salty - fried onions does not assist. Also, this for lunch is app. 250 calories less making the nutrition value pretty low. I am not saying the calories in a similar hotdog are healthier, since it is comfort food an supposed to be fatty, but... Not my choice for lunch.
