Perfect. Made with normal rhubarb from allotment. Half a star anise, a couple of lemon skin shavings and some brown sugar. Not brown but nice and pink. WOW.

No, I'm in the same boat and have had my applications rejected multiple times. They stopped issuing them over the COVID period and even now they're still saying they don't have the staff or time to issue them.

Super late to the party: High proof alcohol is an excellent flavor extractor. You don´t need sugar on top of that for that sole purpose. The sugar on the other hand knocks down the sour taste that follows rhubarb.

Once you've found a river with crayfish the rest is trial and error really. It's vital that the trap lies flat on the bottom, so avoid excessive reeds/vegetation. I often find parallel to the side of the river bank works well.

Just a quick heads up about correct seaweed gathering techniques. You should always use a knife or scissors to cut the bottom half of the seaweed off. This way it can grow back from its hold fast. We had to re-record the first section as when back at the car, noticed that the focus was out. When we went back to the filming spot we had left the scissors back in the car, and being lazy and frustrated just reshot the clip without. At 25 seconds in you can see me washing the sand off in rock pools, and then unforgivably pulling a piece of seaweed of the rock pool. Do not do this, it was a crappy bit of foraging on my side of things and not something I normally do. I've considered taking this video down, as recently its seemed to have blown up and I'm concerned people may replicate my bad behaviour. Please don't.
