That recipe helps remind us of how they could be. I'm glad you are enjoying them. To get authentic texture, there needs to be a gelatinization step with the tapioca, also try and find povilho. The tapioca that you are using is actually probably fine but might bring a higher water content to the recipe. So basically, boil the wet stuff minus the egg, immediately mix into the dry stuff and let it sit until the temp drops below 60ºC then add the egg. Adding before that will cook the egg. Then form balls. No special pan needed. Cheese that is a little harder is also recommended. With all of that, you end up with a really structured cheesy delight. It looks like you're having a good time, congrats!

Get a pellet smoker and ditch the oven and pan portion of your method. Smoke at 180-225 degrees with hickory or oak until internal temp of meat is around 115 degrees. Pull and let rest. Then sear in a 1500 degree broiler. Thank me later.

@@pedaltheglobe419 I like them but not a fan. Couple buddies have them and they like using the pellet system over wood. The temp can be controlled really well which is good. but i prefer a wood burning smoker / grill combo. Finishing up the yard first before getting one

Pepper can burn So I never put it on before cooking the steak. All I put is high-quality salt and then after I cook the steak, I put pepper or whatever other season you would like to put.

@@Typical_liberal pepper can burn if one isn’t careful. I’ve tried it with and without pepper to see the differences. Haven’t found any personally that changes the flavor profile enough. However, in saying that, I have to make the distinction with the reverse sear technique. It’s only in the skillet 2-3 minutes on each side. Versus a non sear method where it might be 8 minutes on each side.

@@melissatolito9418 general rule is 275F for 50-60 minutes. I pulled the smaller ribeye off around 45 minutes. The 2 larger ones I kept in a little longer than expected. Maybe 70 minutes. But the bigger ribeyes are huge. 3” thick. Most ribeyes people buy will be perfect at 50 minutes

@@jasonjordan4444 just a couple table spoons. However,,, the ribeyes released a lot of fat bc I kept the fat cap on the end. I have to remove the excess oil a couple times. No biggie. But you really don’t need much oat to coat the pan. You can use any oil you prefer. I added olive oil only bc they were not going to be in the pan more than a few minutes. Fast stove time
