Once I threw my jacket on the seat like that and about 10 minutes later my bike was on fire due to the jacket touching the hot pipes. Thankfully I got it out fast but the jacket was toast and it burnt a chunk out of the seat.

I have a toffee recipe, and you add vanilla just before you take it off the heat. I don't know anything about the science of baking, so I’m curious as to why or why not add vanilla. And what it adds to the flavor adding vanilla or not adding it. I did make several batches for Christmas one year and did away with the thermometer after the second batch and just watched the color change.

If you want stingy soft toffee add a teaspoon of vinegar it softens the end result , my great great grandma taught us all her old English ways ,she was a hop picker and she said she’d make it over the fire outside and the colder nights would set it and the family would have a treat to take to the field the next day

I find that my toffee “breaks“ when I stir it too much and too vigorously. Stirring it gently, just scraping the sides, will help to prevent it from breaking.

My toffee will not turn out well unless I use salted sweet cream butter. Unsalted guarantee fail. I prefer chopped almonds. While living in Reno, Nevada, I purchased the almonds from a yogurt shop. My family recipe calls for two tablespoons white Karyo syrup. This is a generational favorite. Good luck all.

Well, I burned 3 batches this year…don’t tell Oma!! We discovered we were not using the same butter…they technically weren’t burned…but the butter separated. However, we’ve made about 10 batches so far this year. Just finished one of two for the night!! Merry Christmas!!

Just found your video. I had an Oma named Helen and my Aunt’s last name was Weidner, so I felt like I was supposed to watch this! Thanks for sharing such a detailed explanation of how to get good results making toffee. It’s probably my favorite candy and is totally addictive. You did a wonderful job of explaining it.

Probably the butter you are using. Had 3 of the 14 batches I’ve made this year separate. It was the butter. I don’t know if Oma is having any issues…she probably wouldn’t tell me. It’s a little disheartening for sure but I’ve had way more successes than failures. Merry Christmas!!

Starting on high is ok as long as you lower the heart after it begins to melt... lower heat keeps it from separating

I made this the 1st time. The oil from the butter laid on top of the toffee. What did I do wrong? Oh yea, I added 3 tablespoons of water into the butter/sugar.

What brand butter do you use? You said to use fresh butter, what do you mean fresh butter? Can you find this at local supermarkets?

I use Land of Lakes but just made a batch with some Irish butter. As long as it is sweet cream butter, it should work. Salted or unsalted

For less experienced cooks, please use a deeper pot. I was always taught to use a wooden spoon. In making Old Engish Toffee, it doesn't matter? Thank you for teaching me the different stages. This helps keep track of the process.
