Get a strop for your Ken Onion blade grinding attachment and use that? You seem to be able use the blade grinding attachment just fine so why not use it for stropping?

@@linuspauli8049 I look up the angle on some of the better grade knives, but most kitchen knives I sharpen at 16°.

Every once in a while I'll have someone bring me a pair of salon shears that someone thought they could sharpen on a belt sander........it's usually the husband that thinks they are sharpened like a knife. 🤣 Great video Jim. The 3M belts were a game changer in the speed and quality of my sharpening. Great video Jim. Keep it up! Get a cheap Harbor Freight 1x30 and lay it down and make it your dedicated stropping machine. I have a leather wheel on one of their polishers also. The leather belts stretch so much. So many ways to do things.

You almost gave me a heart attack again!😲😂 Maybe what you need to do is build a box for it so you can lay out on its back and away. A little compound goes a long ways, too. If you have a Harbor Freight in town you can get the green chromium compound there, a good size stick for five bucks. Lastly, I would encourage you to try just using the Bucktool grinder edge leading for a while. It does take some getting used to but once you get the hang of it you'll probably like it better. IMO it's the superior method. It's faster and removes less metal while leaving a much smaller burr. I have three identical machines so I can leave the P120 Cubitron on one, the A30 Trizact on the next and a leather belt on the third. So far I have not built a box for it but I do plan on doing so just for the stropping machine. If you're watched Cliff's video you'll see his setup is as I describe. I was fortunate to be able to fly out and train with him in his shop and that setup is sweet! My own setup is highly influenced by his! Good video! I am following you to see how the shop progresses.🙏

I've got a few ideas for the Bucktool to get this under control. I have seen Cliff's videos and it is already influencing my decisions on how to proceed with more equipment. Just need to keep the business coming in as I'm trying to only invest what I make (that's really hard as I just want to go buy everything now 😊). I have been practicing with the leading edge on the Bucktool, just not a lot on camera yet. I use a bunch of my practice knives as I don't want to mess up a customers'. @@hsknifesharpening That's a wise policy! Cliff has mentioned in his "starting out" video that he let the first machine pay for second, then the second machine pay for the third. Before I flew out to Hawaii to train with him I did some knives edge leading and I could tell it was a good method (didn't want to work it too much and build bad habits but I couldn't resist trying it). One of the main reasons I wanted to train in his shop was to learn how to do convex hair shears and he really is a wizard. He makes it look easy on video but in person it's even more impressive just how smooth and fast he is. Guess the first ten thousand knives are the hardest.😉

Great video Jim. I think the 3M belts are the best out there, I never throw away the Cubitons. Even a worn 120 is handy to have on hand. I was buying them from another vendor at a high price until Cliff started carrying them.

I almost had a heart attack when you went into the leather! 😲😂Good thing you noticed before you caught the belt! You could just pop of the angle guide from the platen and use the slack and definitely some compound helps a lot. The diamond spray Cliff sells works very well but even just the green compound it good.

I looked it up on Shun's website and their knives are sharpened at 16°. Some sharpeners may sharpen at different angles, but I prefer to stick with the original angle if I can look it up. Thanks!

Yes, I do normally wear a respirator (but not always when I'm recording). In warmer weather, I can turn a fan on which blows any dust out the garage door which reduces the need for one. This is just what I do, and really, a respirator should always be worn as it's not good to be breathing the metal dust. Thanks!

Would gladly trade places with you Jim! We're in the middle of a heatwave down here-44°C (111°F) during the day and 28°C (82°F) at night. I hope you'll revisit the KO from time to time as you move on to other machines. I feel like videos featuring Ken Onion or Work Sharp in the title will always draw more views. It's what initially brought me to your channel. Cheers mate!

I will be using the KO even as I get other machines. It has it's place as a good sharpener and will work well for many items other than knives. Hope it cools down a bit for you. We rarely get that hot in the summer, although we occasionally do have 100° + days. Thanks!

Thanks for the video. Beginner here and I had that exact problem as I get to the point but I am learning. I haven’t been able to cut paper that well but wasn’t using a strop. That will be the next thing to buy

I had the old version of this and was never happy with this guide system as it was hard to keep the same angle and get towards the heel. I just got the new sharpener with the pro attachment where you hold your blade flat and it's been far better

Nice! As your business grows you will want to add a second and maybe even a third grinder. It's much faster if you can one set up with the Cubitron 120, one with the Trizac 600 or 800 and another with a felt or leather belt (or wheels as you prefer). It's much faster if you don't have swap the belts especially as it's kind of awkward to change belts (I always get hung up on the screws that hold the cover on). I assume you've watched all of Cliff's videos? If not you need to! He's a great resource.

Yes, I have watched a LOT of Cliff's videos and I have an order of belts on the way. I do plan on adding machines as funds allow from sharpening more knives. Also a grinder or two for wheels. Thanks for watching!

@@hsknifesharpening I am in the process of opening my own sharpening business so I've got a ton of stuff from him the last few weeks. I got a brick & mortar shop where I'll do laser engraving and sharpening. So I am kind of in the same spot as you just maybe on a little larger scale. My next order from Cliff should be here in a few days, it's all the diamond serration wheels that he carries. My shop will have three of these 1x30 Bucktools, three 1x42 grinders, two low speed 6" grinders and a buffer with Scotchbrite wheels. On one of your other videos I think I mentioned that I flew to Hawaii to train with Mr. Curry in his shop, all in an effort to get my business off on the right foot. So I'm really enjoying watching you begin the same journey I'm on!😎👍🙌

Congrats on the business and the channel! Cliff Curry is an amazing resource and a terrific guy. You can't go wrong by subbing to his channel and soaking up any tips he has. When using the angle guides is important to sit or stand at a comfortable level in front of the machine! I like my "workspace" to be at a level between my solar plexus and my chin. You really need to be able to see clearly what you're working on so you can see that burr come up. I've subscribed to your channel and can't wait to follow along with your journey.

Check out Curry Custom Cutlery for the Cubitron 120 belts and see if that saves your some time in the initial sharpening getting a burr. That is wild the shape of that blade. I bet there are not many people sharpening these. I bet they just replace them. You might have a huge niche here. Thanks for sharing Jim. You are right I'll never see one here in Texas! 😀

Congrats on starting sharpening business and channel. It's a great journey. I love Bucktool!! I'll give you a Cliff Curry tip and he has a video on it. Modify that angle guide just a bit to get the edge as close to the belt as possible. Makes a huge difference. Stay Sharp and let's stay in touch.

Funny you should mention that. I just got through modifying the angle guide a few minutes ago. Enlarged the hole with a Dremel and ground down the edge with the guide in place by lightly pushing it into the belt. It's nice and close now. Thanks for your comment and yes, let's stay in touch!

I’m in a very similar situation to you Jim, with just a few subtle differences. I consider myself a hobbyist. I enjoy sharpening knives for family and friends. Like you, I use the KO but just the standard edition. I’m currently deciding whether to upgrade to the blade grinding attachment or invest in a 1x30 Bucktool with a grinding wheel. Unfortunately, the options are a bit limited here in Australia. The only 1x30 models available here include a 5" sanding disc, which, to my understanding, can’t be swapped out for accessories like a Scotch-Brite or leather stropping wheel-features that make the Bucktool you have so appealing and ideal. I’ve thought about potentially turning this into a business in the future. I’m really looking forward to seeing how your journey progresses!

Thanks Paul! I think if I were to start again, I would start with the Bucktool. The Worksharp is good (and I like it), but it is not really heavy duty enough to be run hours/day. Even if you can't get the Bucktool with the grinding wheel, you're still really looking at 2 belt machines, and I would personally choose the Bucktool. Hope that helps!

The Toolcker is popular and I would like to get one. The only reason I got the Bucktool first was price. About $140 for the Bucktool vs. $300 for the Toolcker. Thanks!

@@Paul.1864 IMO the Bucktool is the better machine especially for a pro. The open frame of the Toolcker has no provision for dust extraction which sucks. I have three of the Bucktool 1x30 machines and two of the Bucktool 1x42 machines and they're fantastic for the price.

Get you a ceramic hone from Worksharp and it will remove that burr in just a few strokes. Once you have honed with the ceramic then strop on your hand mount. You will fight the burr roll far less!!

Does using the belt sharpener give the kitchen knives a convex profile? I assume that you'd want more a v-edge for your kitchen knives but I'm still pretty new to other sharpening methods and not sure how impactful the belt method is.

Hi Rob! The Worksharp has an adjustable roller which I have in the first position, so there is only about 1 1/2 inches between rollers which doesn't allow much slack. I'm also letting the belt do the work without a lot of pressure applied to the knife. Because of this, it seems that there is a minimal amount of convex on the profile. I will be posting soon with a new machine that also has a platen which basically eliminates convex. Hope that helps.

Also when I started working with a Work Sharp they claimed that the convex edge gives greater edge durability.

@@djspbb it does but a convex edge is not what you necessarily want in a kitchen knife. A v edge will be sharper and perform better in food prep.

Hey there! Good luck on your business venture! I’m currently using whetstones myself for sharpening, I was hoping you could explain why you switched to belts and if you’ve experienced any instances of accidentally taking too much material? I’ve been considering the switch to powered sharpening myself but I’m afraid I have too heavy of a hand for it.

I've never really taken off too much material. Just use a light hand and I don't go less than a 120 grit belt unless absolutely necessary. Belt sharpening with good belts is much faster. I would recommend edge trailing to start. Edge leading will take off material faster in my opinion. Thanks!
