Hey Abby! I have been growing roma tomatoes for sauce. I have about 8 bags in the freezer, single layered to make pasta sauce when everything dies down from the summer. Do you have a good pasta sauce that you would recommend? I plan on using my roasting pan when it's time to process them. Love your videos!

Potatoes were raw for this recipe. My pressure canner requires 3 quarts water, might depend on brand/model. These are 1 quart jars. These are pantry staples for us! Happy to have you here :)

I love the recipes that you have on this video.. my family would love them all! I do recommend that when u take your jars out, that u try not to tip them as much.. maybe try a tool that grabs them from the side... It can compromise the seal sometimes..

Hi Abby I recently made collar bacon which turned out on the salty side. I cooked a batch this morning differently than usual I added about half a inch of water to the frying pan laid in the bacon end bought to the boil for a couple of minutes then tipped off the water and fried off the bacon as usual dropped the salt heaps might be worth a try with your current batch of bacon.

I want to thank you Abby . I was about to throw my canner in the trash. I couldn’t hold pressure in the canner I had to watch it like a hawk. Really sucked for an hour and a half of my day. You told me about the cover block vent thingy. Mine wasn’t screwed on tight and that is why I couldn’t hold pressure. I tightened it and now I am re processing my food and it has been wonderful. No loss of pressure . You saved me.

In the West Indies we don’t put tomatoes in curry. In so many other countries the recipe changes. I love that we can have multiple variations of the same food.

If you’re using chicken broth, isn’t that a meat product that would require an hour processing time, instead of 40 minutes?

No the processing time for chicken broth is actually 25 mins for quarts, so no need for additional processing time if using with the potstoes

Always finger tip tight. How much water in the pressure canner may differ by brand/model. For my presto 3 quarts

Chia pudding I find I just don’t want daily, lunch packs I only have 3 of the divided containers so I typically prep those all at once then put together the others once I’ve got the containers clean again

I am going to try the curry recipe in a pint jar and omit the chicken. I have quite a bit of "Ugly Chicken" so I could easily make a Chicken Curry with combining . I also like to have Vegetable Curry so that would give me options. Thanks for sharing. I am trying to can more shelf stable meals as my husband of ,52 years has dementia. Having a well stocked pantry is a necessity for me now. God has blessed me so much by leading me to KZbin. God Bless you and thanks again for the inspiration.

Hi Carrie! I usually do, this time I didn’t because I cooked with garlic and ginger and didn’t see a use for it. I’ll save it from a normal batch and use it to cook veggies. Adds a lot of good flavor!

Hi there Abby tip with the bacon when your meat has cured and you wash off the cure soak the bacon in water change the water once or twice at the start of the process. I generally soak mine for an hour or longer depending on how much salt taste you want. Don’t be tempted to reduce the cure time. For dry curing the rule is 1 week per inch of meat thickness.

@@abbeyverigin Just another safety tip if you ever get to the point of smoking the bacon it’s a low oxygen environment and you need to use nitrate cure 1 @0.25% to avoid salmonella. The other option for smoke is to use liquid smoke.

@@abbeyverigin I thought I would share this recipe for bacon. Ingredients 5kg pork belly 300 grams course de-iodised salt 250 grams brown sugar 10 grams white pepper 4 bay leaves finely chopped 25 grams ground coriander 5 juniper berries crushed Nitrite 6% strength at 0.25% per kg of meat (optional if not smoking) Directions Combine and mix all ingredients Rub in half the cure reserve the rest Place in non reactive container and rearranged the bellies each day pour off liquid After four days rinse off bellies and apply reserved cure and allow to cure for a further four days rearranging the bellies and pouring off liquid. Remove bellies from container rinse off and soak in fresh water for two hours. Pat dry and allow to dry. You now have a couple of options cold smoke for 8 hours with maple wood once cold smoked its then ready to cook and eat. Option 2 hot smoke Place in smokehouse at 50 deg C for 1 hour no smoke Raise smokehouse to 75 deg and apply smoke and cook until 57 degrees internal temperature is reached, remove from smoker and refrigerate then slice and cook. Option 3 cook like you have for your last batch.
