@@Lachesisms yes, very much. I highly recommend milling if you are going to start baking all your bread. It’s so much more nutritious than shelf stable flour and very easy to accomplish.

You will see a small little white tip starting to emerge. Don't over sprout or it will make your bread gummy

Loving your videos. Please do not stop them. You have been so helpful. I started the hard wheat berries milling at home for the sake of my family’s health. Coming from the all purpose usage for years, starting to bake sourdough with freshly mills it’s a whole new world. So once again thank you so much for your videos and sharing your knowledge. I got my mill a couple weeks ago and have been baking bread (blindly). Instead of testing the dough like you have done, I started making smallish loaves (275 grams flour) to see what hydration seems to work best. Of course I was trying different flour coarseness as well - and different ingredients (sugar/no sugar; fat/no fat). I think I'll try the hydration test you performed before I continue with my experiments. THANKS!

Is this assuming that the sourdough is using 100% of the flour you are testing? If you want to use a % of fresh milled and a % of store-bought, then would you use the same same mix of fresh milled/store bought in each container? I am exploring the idea of using fresh milled flour and i have heard that using 100% fresh milled flour produces a really dense loaf of SD bread.

@@squirrelavengerr31 that is correct. Use the same blend of fresh/store bought flour in your bowls. I think it’s always a good idea to start making bread with a blend, then when you have the basic idea and you are having success try a 100% fresh milled loaf.

Although, using terms like “ruined” is a harsh way to make your point and detracts from your comment being perceived as constructive or being left in an encouraging manner. All that to say.. my video and my channel is for fun and to help others. If my son is having fun with me while I make the video, that is my metric of success. He is my youngest of the 4 boys and it brings me joy to have him hanging out with me in the kitchen. He will be gone soon enough and my house will be all too quiet and clean. I’m in no hurry to have a quiet, clean house and perfect videos.

Try sifting your flour. There is sometimes too many large sharp clumps of grain that could cut the gluten and prevent structure and absorption within the dough.

I hate my kitchen aid. Hardly holds any flour. I have a smaller one than in video. And the stupid motor gets hot. the dough rides up over the hook. And I have to fight putting stuff in while on. Got my eye on ankarsrum too. I like the open top and larger. But the price is a factor and seems it is hard to find in stock.

Organic is grown without pesticides. Pesticides can be very toxic to your health in the long term.

@@marilynjeffers2283 since I made that comment, I have learned that it’s very common practice for farmers to spray roundup right on their grains a week or two before harvest in order to evenly and quickly dry the crop!!! The non organic flour we eat is plastered with Glyphosate!! I’m sourcing only organic flour and wheat berries from now on, I don’t want all that junk in our diets!!!

Hi. My scale is made by Taylor and I bought it at Costco many years ago. It's my favorite. Its easy to clean with the glass top and nice and has a nice big surface to place items or dough balls directly onto the scale.

How fun! My 3-year-old is sitting on my lap as we watch your video, and she is also eating a slice of Mommy's fresh milled bread. ❤ I've been experimenting with hydration today. I have four recipes, 63.5%, 78%, 80%, and 89%. The 63.5% is terrible for my fresh milled hard white flour. It is a log. 😂 The 78% is very nice, but could have more rise. The 80% is lovely. And the 89% won't be ready until tomorrow! Thanks to your video I will also try 85%!
