Wow I'm speechless after watching this recipe and how meticulous you are in each process, I've spent a descent amount of time watching French, Italian, Thai, Vietnamese, Chinese, Brazilian and of course Japanese cuisine but never seen these powder wine sauces before. I mean, you just blew my mind with this high level cuisine there's no doubt you have to be a Top Chef in Japan for sure to get to this level of performance in every procedure.
