So basicly vegan tofu fettuccini alfredo....stop making things up. Chicken is chicken, there is no vegan chicken. Why the need to make it into something it isnt? There's no shame in eating tofu, so why not just say it?

post meateater life ain’t so bad 🥲 save for deets! Alfredo Sauce 2 c roasted unsalted cashews 3 c water 1/4 c nutritional yeast 2 tbsp lemon juice 3-5 cloves garlic 1 tbsp miso paste Large pinch of salt ( I used truffle salt) Heavy pinch oregano Heavy pinch pepper Add everything excluding your oregano to a high powered blender and blend until smooth! Once silky add your oregano and pepper, mix and set aside for use. Excess sauce can be held in your fridge for up to a week! “Chicken” 1 pkg extra extra firm tofu (or high protein tofu) 1/4 c soy sauce 1-2 tbsp seasoning of choice (poultry seasoning does work! Most don’t have chicken in the seasoning itself) 1 lemon 1 tbsp avocado oil 1 tbsp butter (more if needed) 1 c white wine 1 spring of thyme or rosemary Begin by slicing your tofu down the middle, patting dry with a napkin and slicing the edges off the tofu to form cutlet shapes Next add to bowl your tofu pieces, and lather with your soy sauce, seasoning and lemon of each side. Feel free to marinade overnight or use right away! Next add your avocado oil to your skillet, top with your “chicken” and saute on each side for around 2-4 minutes on a medium heat. Add your butter, thyme spring and white wine and begin to base the tofu. Add more butter and wine if needed and based for an additional 5 minutes. Remove from heat and it’s ready to serve. How to make the Alfredo: 1 tbsp vegan butter 1 c vegan Alfredo 1/4 c pasta water 1 tbsp vegan parm (optional) 1 pinch pepper Fresh parsley for topping Now add in 1 tbsp butter to your pan, add 1 c of your Alfredo, your pasta water and vegan parm. Mix well and top with your noddles, once well mixed serve with fresh parsley and your chicken cutlets!

Sausage Ingredients 3/4 tbsp avocado oil 1/2 yellow onion 2 tsp Italian seasoning 2 tsp fennel 1 spring thyme 2 sage leaves Salt + pepper to taste 2 8oz tempeh packs (organic + local is best) 2 c broth of choice 1/2 c soy sauce 1/4 c tomato paste Coast the pan with avocado oil and saute your onion, garlic, fresh and dry seasonings until fragrant Next crumble your tempeh in and saute until well combined (2-3 minutes) and top with your veg broth Once broth is fully absorbed, top with your soy sauce and tomato paste then saute until golden brown (around 5 minutes) Set aside for the soup! Cheese Sauce 1 c roasted unsalted cashews 2 c water 1/4 c nutritional yeast 2 tbsp lemon juice or juice of 1 lemon 3-5 cloves garlic 1/2 tbsp miso paste Large pinch of salt Blend until smooth and set aside! Soup Ingredients 1 tbsp avocado oil 1/2 yellow onion / diced 5 cloves of garlic / diced 1/4 c sundried tomato paste or sundried tomato’s 2 tsp Italian seasoning 2 25oz fave tomato sauce jars 1 serving cheese sauce (above 👆🏽) 2 9oz vegan tortellini 1/2 lbs spinach Toppings: vegan parm, fresh basil, olive oil Begin by adding you oil and top with your onion, garlic, sundried tomatoes and seasonings. Saute until fragrant. Next add in your two jars of tomato sauce and fill each empty jar with water and pour the water back into the pot. Give everything a good mix, then bring to a rolling simmer. Now, add in your tortellini, sausage and spinach. Mix and cover! Once tortellini begins to rise to the top of the pot, add in your cheese sauce, stir and serve!

It saddens me that people have tried vegan food once or twice and make comments like “looks good for being vegan.” I’ve been vegan for a little over a year now and it’s been the most flavorful, creative food I’ve had in my entire life. Growing up as a Guamanian, I’ve have a lot of my cultural foods. I’ve been able to recreate everything from my culture without the animal suffering. I’m glad to see you recreate a non-traditionally vegan soup! This right here looks delicious!!!

I remember seeing your post on Instagram about this and you have been on my heart since. What a traumatic thing to go through but you turned it into something so beautiful with so much grace. You don’t even know how much your videos help me to stay healthy and I’m influencing everyone in my household to eat more plants and fiber you’re recipes you share on Instagram is a big part of how I’m able to do that.
