This is the very best explanation of the need for E# and and C flat I have ever seen in my 80 years of life with many many hours/years/times I have been envolved with the study of music theory both formal and informal. Your use of scales and the musical requirement for defining all 7 letters in a scale definition is the key to this explanation. You are definitely a "Tier 1" teacher of music theory. Awesome.
