It should have been stressed more that the chicken livers should be bought pre-broiled (flame grilled kashered). Unless you are experienced and skilled and have the right equipment, it is not recommended to try and kasher your own livers. (You cannot fry them in a pan from raw). Nothing to do with Kashrus, but if you want the true taste of traditional Eastern European Chopped Liver (and not the modern extravagant American version), then you would have to mix in some raw bread crumbs. This acts to bind the liver more and gives it a firmer more traditional Jewish texture, rather than the French Style Pate that using 100% livers would have. Most Jewish families back then would not have been able to afford to make chopped liver from 100% livers anyway. Just look in any Kosher Cookery book from the 19th to early 20th century to confirm this. They all added breadcrumbs or mixed in bread pre-soaked in shmoltz or shmir (chicken fat). The bread crumbs would have made it go much further. Likewise, the traditional way to make Chopped Herring is to add stale bread to the chopped fish, pre-soaked in the herring juice.

10:50 I would say to this problem (of the larger communities) that this mashgiach fund should be under the purvue of the local tomchei Shabbos. So, say, for the two of three dozen mashgichei temidi in Lakewood, a fund in the local tomchei Shabbos would send them a monthly or quarterly stipend. This way the funds would be responsibly distributed, and nobody in the community will complain that there is yet another, new schnor going on.

Great video. Because the recipe makes enough dough for 4 to 6 loaves, you can bake some loaves right away and freeze the rest of the dough for another week.
