In North India, turmeric is commonly called “haldi”. Dhaniya powder is fine ground coriander seeds. Cumin powder, is also called Jeera powder or Ground Cumin. Amchur powder is called dry mango powder.

It is the reaction of the tea with the baking soda that gives it that beautiful Pink colour. Try it out..use green tea leaves.

Recipe 🌿 * Peel the Turai and chop into medium sized pieces. * Heat 1 tbsp Oil and add 1/2 tsp Jeera, 1/4 tsp Hing and a few Curry leaves. * Now add 6 to 7 finely chopped garlic cloves and once they turn golden add 1 diced Onion and 1 chopped tomato. * Saute till the Tomatoes turn soft. * Now toss in the chopped Turai. * Add 1/2 tsp Haldi, 1 tsp Red Chilli Powder, 1 tbsp Coriander powder and salt to taste. * I have added 1 tsp Goda Masala but Garam Masala can be added instead. * Add 1/4 cup water and cover with a lid. * Pour a little water over the lid and cook covered for 10 mins this allows the subji to cook evenly with little water and prevents it from burning. * Finish with a good sprinkle of Fresh grated coconut and coriander leaves.

Recipe 👇 Ingredients: For the Khandeshi Masala Dry roast all the ingredients till golden and crisp 1 cup dry grated coconut 4 to 5 Red Chillies 10/12 Peppercorns 7/8 Cloves 2 inch Cinnamon 1 Star Anise 3 Green Cardamoms 1 Black Cardamom A small piece of Javitri A small piece of Nutmeg Remove and cool. Into the kadhai dry roast 2 sliced Onions 2 inch Ginger 6/7 Garlic Cloves Roast them without oil till they soften and the colour changes to a dark brown shade. Cool and grind with the roasted coconut n spices using water to a smooth paste. Rest of the recipe pinned in the comments Marinate 1/2 kg Mutton with 1 tbsp Ginger Garlic paste, 1/2 tsp haldi, 1 tsp Red chilli powder, 1 tbsp Dhania powder and 1 tsp Salt. Heat 3 tbsp oil. Add 2 chopped onions and fry till golden. To this add the marinated Mutton and saute on high heat for a minute. Add 1 cup water, cover and cook for 15 mins. Add 2 to 3 tbsp of the prepared paste, add 1 cup water. Cover and cook till the mutton is fully cooked. Serve hot with Jowar Bhakri.

Wash and dry the cherries. Pit them as shown. 🍒Add 1 cup pitted Cherries to a pan. 🍒To this add 3 tbsp Castor sugar and 1/4 cup water. 🍒Let it come to a boil. 🍒Once it starts frothing, add 1 tbsp Cornflour mixed with 2 tbsp water. 🍒The mixture will start thickening. 🍒Cook for a couple of mins and then add juice of 1/2 lemon. 🍒Give it a mix 🍒Let it cool for a couple of minutes. To Check the consistency, take some compote on the spatula and run a finger through the liquid as shown. The line should stay. Cool and store in a glass container in the refrigerator.

Mash the pressure cooked Rajma using a potato masher. Saute 1 finely chopped Onion, 1 tsp Ginger Garlic paste and 1 tsp Red chilli powder. Add 1 tbsp Besan n saute again for a minute. Add this to the mashed Rajma. Add 1 1/2 tsp Kasundi, salt and 1/2 cup Coriander leaves and mix well. Shape into Kababs and fry on a tawa with little oil. Serve hot..topped with onion rings, pudina chutney and more kasundi.

Ingredients: 2 cups chopped Cabbage 1 1/4 cup Besan 2 tbsp Rice flour 1/2 tsp Haldi 1 tsp Red Chilli Powder 1/4 tsp Hing 1 tsp Salt Water for binding Method: Make a coarse paste by grinding together 2 green chillies, 1 inch Ginger, 10/12 Curry Leaves, 1/2 Cup Coriander leaves, 1 tsp Saunf, 1 tbsp Whole Coriander seeds, 1/2 tsp Jeera. Add the prepared paste and all the masalas to prepare a thick mixture. Add water as required. The mixture should not be too runny. Pour into a greased plate n steam for 15 mins. Cool n cut. Heat a little oil in a pan n fry the bites on both sides till crisp. For the Protein dip: Blend together 1/2 Cup Paneer, 3 cloves of garlic, 2 tbsp Dahi and a little salt to a smooth paste. Top with some Chilli oil (optional)

Recipe Heat 1 tbsp butter in a pan. Add 1 diced onion and saute till translucent. Next add 1/2 a de seeded tomato and a handful of chopped spinach. Add a little salt... remember that the spinach also has some salt ...so go easy. Cook till it become a little dry. Remove and let it cool a little. Break 3 eggs in a bowl. Add 1/2 tsp pepper powder, 1 tbsp fresh cream,1 tsp chilli flakes and just a pinch of salt. Am using 1/2 cup grated Edam cheese as I love to experiment with different cheeses..you can use cheddar cheese or the regular cheese cubes. Whisk well. Heat a tsp of butter in another pan. Once the butter melts, add the egg mix. Spread it evenly. Cover n cook on low heat till set. To give it a little more spice I drizzled it with some chilli oil.

For Broccoli paneer bites Blitz together around 1 1/2 cup broccoli with a green chilli and since fresh green garlic are in season I used those..else u can go with 5 to 6 garlic cloves. Remove in a bowl and add 1 cup grated paneer, 1/2 tsp pepper powder, 1/2 tsp oregano and salt. Mix well and shape. Fry in olive oil till brown. You can coat them with coarsely ground almonds or peanuts if u like a crunch. For the dip ..simply blend together 1/2 cup paneer, 2 tbsp curd, 1 cheese cube, salt and a single clove of garlic.
