Thank you for the informative video. QUESTION: What is the easiest/best way to maintain a lower constant ambient temp (225-250 degrees range)?…. I’m brand new to smokers, but recently picked up a very nice (used) vertical propane smoker (GRAND CAFE Gas Smoker), but I’m struggling with being able to mitigate a constant lower ambient temp. The ambient temp keeps wanting to climb to 300+ degrees, and so I open the smoker doors every so often, but that’s not really a proper solution. The gas intake on the smoker is set to the lowest setting. Water pan is good…. some initial thoughts… (1) dry wood chips vs. soaked wood chips. If soaked, how long to soak? And how much to use when initially filling the wood chip box, and intermittently during the smoking process… (2) thoughts on potentially managing the airflow (vent) at the top of the smoker, not much, but maybe loosely with some foil, on one side only?… (3) or maybe it would simply help to close the actual propane tank valve just a bit, on the propane tank itself, thus possibly allowing less propane to enter the smoker, and lower the temp? Is that the trick?… (4) Am I missing anything else abundantly obvious in this equation, which might allow me to maintain lower constant ambient temp? … Thanks in advance for any sage counsel and advice!! Just trying to learn the ropes...🙂

Rule #1 Do not put your meat in until your chips have started to smoke. Rule #2 Soak your chips in water Rule #3 Check your wood chips every one hour, and mix in flavored brickets for a longer smoke 💨 Enjoy.

Lol, water pan is a heat diffuser, that is all. Water turns to vapor at 212 degrees. That pan doesn't boil when you are at smoke temps. That wine is a hilarious waste of money.
