Outstanding video! I kept thinking: "Tony must have a taxidermy business on the side!" I have skinned and butchered many animals... too many to count, but that is the cleanest process I have ever witnessed. I also used to have a taxidermy business on the side but gave it up in favor of more family time and time in the field. Kudos for your meticulous attention to detail and thorough explanation of the processes. Great work.

This guy is awesome - such a great video. The only thing I do differently is I wouldn't cut the muscle group into steaks before freezing. You're exposing more surface area to freezer burn as opposed to cutting them when you take them out to use.

With deer, I've always field gutted right away to get the meat cooling down asap. Is it not the same with bear? Our season starts with deer season (end of Sept) so it can still be quite hot during the daytime. I guess the quarters will cool with skinning, but I'd be concerned about the backstrap, etc

It is always the best practice to get the hide off as soon as possible in warmer weather. There are times I leave the hide on. Particularly when the environment makes it difficult to keep the meat clean during transportation (e.g., sandy or muddy soil) Typically once I am in a safe clean area I will remove the hide and begin the cooling process. During the last couple of seasons I have brought animals home hide-on when the method of transportation, temperature and environmental conditions made it possible. Processing an animal in the clean space of my shop has certainly allowed for high quality meat care. I typically do this when the temperature is at or near freezing for the majority of the day.
