I preffer to poach chicken breast it is quicker 15-20 minutes and there is less chance to overcook the chicken, if i want it now. Otherwise i sous vide at a lower temp 145-degrees F for a longer time 2 hours [ at least 1 hour and no more than 4 hours], for a juicer more tender breast. Adding whatever spices/seasonings/aromatics to the vacuum bag as required by the recipe or what you feel like.Whatever method you choose make sure to probe the meat to see that it has reached the safe temp for it type. I live in the Dominican Republic and today I just bought 32 cacao pod for $5… that was way more than what I would usually pay… but we really LOVE Cacao juice and cacao wine… plus I make my own chocolate and Cacao husks tea (without any caffeine) it made about around 45 oz of pure nectar. When they make chocolate people refer to it as “baba” (let’s say it means a mixture between slime and drool) and they just try to get rid of it in order to dry the cacao as fast as possible. But they have no idea what the juice tastes like. GREAT VIDEO! I can’t wait to try it!
