Very delicate , slightly sweet flesh , slightly chewy as they're strictly free range. The sauce wasn't overpowering but served to highlight the chicken without dominating the flavours. Creamy goodness with flavours of truffle and a little foie gras melted into the sauce to give a bit of richness.

Chicken cooked inside a pigs bladder, with trufle inside the skin, seasoned with salt, pep, cognac champagne, white wine and stock, its cooked for 1 and a half hours in boullion, so yes, its actually quite flavorfull and delicate, its looks bland and uncooked but its quite the opposite

Just googled wtf is going on and learned that that’s chx cooked in a pork bladder, Stuffed with Foie gras. Which is the liver of a geese 🪿 that’s been force fed threw a tube and restricted from exercising so that its liver grows 600% bigger than its normal size 😳 what the fuck is wrong with the French.

I admit, I cook and I bake, mainly Italian, Creole and British cuisine. I would stand my dressed, stuffed roast chicken up against that overpriced rubbish in a plastic bag, any day of the week. That didn't even look like a proper meal. Honestly, some people have more money than sense.
