They have pork cooking right with the chicken. I can't eat there, because you can't have clean and unclean cooking together the unclean (pork) contaminates the clean (chicken) the chicken is no longer clean.

Pensacola here. Just found your channel. We Stopped by Joe Patti and got 2 pounds of royal reds and helped my teen daughter make this, showed her how to clean shrimp. Normally we have an old fashioned southern shrimp boil. But ee made this as an appetiser and It was all eaten in minutes by our family! Great recipe ! Also. We are a Dukes mayo family. You could do an entire video on Dukes and non Dukes folks.

Thanks to Operation BBQ Relief and this EXCELLENT presentation. That really helps me at the local Randalls/Safeway when they have the Bone-In Ribeyes on sale for $6.99/lb! Best steak deal in TEXAS. I may want to become a judge also though I have a REAL bias against over-cooked (MEDIUM) steaks...

Every competition that I’ve judged in has FORBIDDEN the cutter to rotate the steak in any way prior to cutting. It’s the responsibility of the cook to orient the steak in such a way to maximize the appearance (back of the box) and tasting (front of the box).

Maybe it’s just personal preference but cast iron skillet is more flavorful since you catch all the juices and can baste your steak in its own juices. Loved the video!

I went to Central BBQ on Central Ave in Memphis on 5/9/2022....it was not that good. My 10 yr old didn't even eat his mac and cheese...it was bland and flavorless. The lady at the register was rude and uninterested...maybe she wanted to be somewhere else? Around back were the bathrooms...porta-potties..it was disgusting back there....old food on the ground...a large stream of some red liquid running from the main building. This was probably one of the worst eating experiences I've ever had. I had high hopes and it was a complete letdown.

So it sounds like this is basically like a pellet smoker. Once you get your fire going no matter how much fuel you add, the unit controls the temperature? So what is the need for the top vents? You aren't really using them to control temp right? Is it just to control how much smoke you want to have in the cooking area?
