Sorry, it's been a while since I've played the game so my details may be wrong. After watching my own video again, I would say you would need to input a roll right after you guard an attack. The timing it tight though iirc. And if another attack is guarded, it makes it even harder to get the input right. Sorry I couldn't help more. It's been multiple months since I've played this game.

Try triggering dark step with roll and try using it with a regular left or right input. I don't remember which one triggers it, but one does XD. Sorry I can't be of more help.
