be careful with the salt guys a messed up a good snapper on my first time smoking a fish and used way to much salt cause everyone was recommending it and it was inedible

I just tried this recipe. For me the fennel bulb made this dish. My supermarket didn't have the fresh herbs suggested but I found watercress sprouts. Delicious with crunchy bread and a glass of New Zealand Chardonnay. Heaven on a winters day. Thank you for sharing Al.

Thank you! 1:11 marinade: toasted cumin seeds, Korean chili flakes, sumac, lemon zest, oil etc. Preheat oven to 200C, 10-15 roasting

Hello, wonder if you could help me, when i smoked my fish in the same way it had a horrible burnt flavour. I didnt soak the sawdust but was wondering what may have made the bitter smoke flavour. Thanks.

I've been doing fishing streams for a while and been throwing these fish back constantly. I've only just learnt that they make great sashimi so now I'm really keen to catch one to try! Such a waste throwing them all back! wahhh

Well done. I thoroughly enjoyed watching you make these and finish it off with a drizzle of your olive oil. I made this a while ago and my husband loved it. i have more coral trout wings now and after googling fish wing recipes....... Al is absolutely correct about a freshly shucked oyster. The difference is astounding. I learnt to shuck using a thin wide screwdriver if you're worried about using a knife at first. Love your videos Al. Keep up the good work of making fresh seafood available to kiwis. There is nowhere else in the world that has the variety and freshness of seafood.
