be careful with the salt guys a messed up a good snapper on my first time smoking a fish and used way to much salt cause everyone was recommending it and it was inedible

I just tried this recipe. For me the fennel bulb made this dish. My supermarket didn't have the fresh herbs suggested but I found watercress sprouts. Delicious with crunchy bread and a glass of New Zealand Chardonnay. Heaven on a winters day. Thank you for sharing Al.

Al is absolutely correct about a freshly shucked oyster. The difference is astounding. I learnt to shuck using a thin wide screwdriver if you're worried about using a knife at first. Love your videos Al. Keep up the good work of making fresh seafood available to kiwis. There is nowhere else in the world that has the variety and freshness of seafood.
