I grew up eating capons here in America. The only place we could even buy one was at the Lexington market in downtown Baltimore. This was in the 60’s.

When I was a kid we always had this soup on Christmas Eve in my half Italian household. I’ll be trying this recipe this year, though I might substitute escarole for the spinach if I can find it.

Thank you! Wonderful tip. I do this all the time and that is dinner in the summer on the grill. Winter in the oven. My mom, Austrian, did something similar and have always loved the dish. And your tray represents the rainbow of vegetables one should eat to stay healthy. Thank you!

I grew up very Italian, and we always had a lot of vegetables on the menu. My father is 90 years old and still works. He always makes sure that the eats a lot of vegetables.
