Thank 💕 you for your wonderful recipe. Question- Did you use the Maseca that says that it is for Tamales? Your method looks really easy, but I am super worried. Also, if I put a little piece of the dough in a glass of water, will it float? I'm sorry for bugging you. So, when I finish making the masa just like you did, I can start spreading my corn husks with my filling right? I just want to make sure that I don't have anything else to do for them. I'm just nervous because it will be my first time making them, so I don't want to mess it up. Thank 💕 you so much for your help!❤❤❤❤❤

just bought a brisket and cut it in half. i put the point half in the smoker and cooked it completely there. delicious as always, of course. the flat half is typically drier/leaner so I am going to sous vide it like you did. I may let it cool before smoking it so I can smoke it longer to get a crispier bark. Hope mine is as yummy as yours!

I have a question for you. My Instant Pot has a slow cook feature which I use often. On the high setting, it actually just barely pressurizes the pot because the button is up about 1/16" of an inch. I am curious if you have tried that - going for the traditional 1.5 to 2 hours, or if you have only tried pressure cooking for 40 minutes? Any difference in texture or moistness, etc. Thanks in advance!

I have looked at several clips to see how long and the water level to cook the pasta and NONE of them have actually said how or measurements until I came across yours. Thank you. The others just show us how to dump everything into the IP as if we need help on dumping all the ingredients in. No help from them.

Thank you for all the tips. Do you ever roast the dried chilis in a hot oven before soaking? And I love the subtle hints about "tequila is optional." Not for the cook!!

Question when I quick my flan even though I use a water bath a loose a lot of caramel. What am I doing wrong? I cook it at 325 for 1 1/2 hour.

I tried this. It took a total of 16 minutes to get a dry toothpick. Our Omni Plus has a digital touch screen (no buttons), so is a different model or vintage. The pan is cooling so we will see how they came out.

Thanx. I still use a large old-style pressure cooker. Am going to use that and follow this recipe. We have a grocery here in Opelousas, LA, that has the largest selection of Mexican foods, so I will look there for that CAL. I love hominy and have been making it on top of the stove by boiling for hours, letting sit overnight, etc. This is going to be a lot faster. I have a lot of field corn that has been left by the heavy harvesting machinery. Full cobs that the machinery missed. Let nothing go to waste is my motto.

Thanks for the tip! I didn't have any of those dish washing pods, so I just put a few squirts of Cascade Dishwasher Liquid in my inner pot as well as a splash of vinegar. Then I used my dish cloth to give it a scrub, adding some water as I went along. It did a great job getting the bottom of my inner pot very clean and stain free. I'll pick up some of those pods the next time I'm at the grocery store and give your full method a try!

wow 3 hrs and they were still raw? 3 hrs is a long time. When you get the tamales out they have to rest for 10-15 mins so they can have time to get firm

Ive made tamales 3 maybe 4 times, and have always bought my masa pre-made. I mix reg masa and pineapple masa together, (using a less pineapple then I do reg masa) anyway, I also make some without the pineapple masa, but the ones with the pineapple masa mix always go SO fast, I can never make enough. ANYWAY, my point being, Is, im going to try making the masa using your recipe, but want pineapple the flavor. Should i just add the juice from a can of crushed pineapples (in its own juice, not sweetened) in place of some of the other liquid, and perhaps just a little bit of the crushed pineapples...
