Thank you for your question. That is salted paddy field crab. The crabs were fermented with salt for several days before they are ready to serve. I bought them from my village market when I visited last weekend. The crabs are very salty, so we need to add sugar, lime juice, garlic, and Thai basil. Mix them well and marinate for about 5 minutes. Then, it is good to go. It is not healthy but tasty for me and some. Let me know if you have any more questions.

Thank you for your comment. It is in a family of catfish. It is from the Mekong River. We are from a village along the Mekong and it is our common food for us. This is one of many recipes made with this kind of fish.

Thank you deeply for your comment. Fish Amok is Cambodia's traditional dish. This one was prepared in village style when we visited our village during school vacation. It tastes just ok. We will make more video when we visit our village again next month for Pchum Ben, a Buddhist festival.

I am glad to hear that you are a big fan of chili sauce. Chili sauce is so popular now. In Cambodia, it originated from coastal province of Koh Kong. The chili sauce is named after the province, Koh Kong chili sauce. Earlier on, people ate it with seafood, but now it goes well with other types of food, say chicken and pork.
