Oatmeal tofu is mushy but sticky. Maybe you can combine oatmeal with brown lentils or other beans that make dry and brittle tofus to make something that won't fall apart when cooking. I will try oatmeal and brown lentils (one to one ratio). Thanks or the video.

Can you use canned chickpeas for this recipe or does it have to start out dry?

Two days ago, I just bought 3 Vision pots, exactly like those in the video I'm so excited! I found them in a very popular store, one large pot, one medium pot, and a large skillet pan.. I was so happy when at first saw them in a cart full of cooking stuff, I just grabbed them like crazy because I had been looking for them a long time ago😃! The food tastes so good and love to watch the food through the glass, it's awesome! 🌟 ❤ 4/17/2024

What you made is a variaton of what in the United Kingdom is called pease pudding or pease porridge, which is made from legumes like split peas, red lentils, or chick peas. Tofu requires the use of a coagulant. Pease pudding/pease porridge can be seasoned in a variety of ways. Vegetable broth can be substituted for the water. Pease pudding/pease porridge has a long history going back to ancient times. You may have heard the nursery rhyme, "Pease pudding hot, peae pudding cold, pease pudding in the pot, nine days old!" It is found in other regions of the world under different names. A variation of pease pudding/pease porridge can be made from gram or besan, chickpea/garbanzo bean flour, or sattu, toasted chickpea flour.

Unfortunately, what you are making is referred to as "Burmese Tofu", which is NOT true tofu. Your product is still oatmeal, containing a huge amount of carbohydrates and which is solidified by the natural beta-glucans (the stuff that makes oatmeal "slimy") ...whereas true tofu is mostly protein. You can make true tofu from oats by making oat milk and adding a few special ingredients available online: Grind the oats in a blender (1 to 4 oats to water) & strain out the fiber with a nut milk bag or cheesecloth. To make the oat milk into tofu requires accomplishing thre things: (1) make the oat starch soluble, so it will drain away from the oat protein; (2) break down the oats' beta-glucan, to a non-slimy, water-soluble compound so it can also be drained away; (3) coagulate the oat protein, which can be separated for the liquid & pressed into a "cake". For step 1, you heat the oat milk to 150 degrees and add 1/4 tsp of alpha-amylase, stir well & allow to cool to about body temperature; (2) stir in less than 1/2 tsp of Beta-glucanase and let sit for less than a half hour. For the last step, heat the milk back up to close to boiling, and add 1T of vinegar & 1tsp of food grade gypsum (dispersed into some cold water), simmer for a few minutes and allow to cool to room temperature. Now, you can strain out the oat protein curds with the nut milk bag, and press them into a firm block with an inexpensive tofu press. The result is true oat tofu. The amylase, beta-glucanse are available from Amazon, EBay or brewing suppliers, and the food grade gypsum is widely available online.

I use vinegar as a coagulant. It's cheap and can be found in most homes.

also if you make it with canned chick peas you won't have the bitter flavor.

Sorry, that cake still tasted raw. After putting in the mold, I put the loafing pan in the oven covered with aluminum foil for 45 minutes at 350 degrees. This also applied to the brown lentils. I believe that for the beans, it may require one hour in the oven. The time cooked on the stove plus the time in the oven should be equal to the time that you would stew the legumes on the stove-- 40 minutes for lentils, 1 hour for split peas, and 1-1.5 hours for the beans.
