How do I reduce the booziness In my water kefir soda?
@Mrgasman19782 ай бұрын
Less sugar. 120 grams of sugar in 1 liter of water will yield about a 2% ABV. keep the qty below 60grams sugar/liter and your kefil will be less than 1% alcohol.

@bloodlove93Ай бұрын
idk about frozen,but look into making a solar powered dehydrator if you won't buy a normal one for whatever reason..... or splurge and suck it up for a. it,buy a freeze dryer,does that job plus the freezing if you want it and freeze dried products easily sell for several times the cost of normal, just look into freeze dried candy sales.

Both of these beautiful creations make me incredibly curious. I might be forced to make both of these tasty treats. How would you describe the taste of the "soda" you made? Is it somewhere along the lines of Kombucha, or more like a classic soda? :) The syrup looked sooo delicious, and I can imagine myself using it in all types of things, from baking, to cooking and to just drizzle on top of dishes. Gorgeous! You are an inspiration! Sending you so much love from me, an _(eeever so slightly)_ crazy Swedish woman, living in Norway ;P

@@Braham_the_Terror That batch was fantastic and several subsequent batches. I had a bad batch that just mushed out probably because my polish pickle making friend told me not to refrigerate them after the first day, but its hot in Hawaii, so that was a fail!

@@markkindermannart4028 That's awesome to read! I'm new to this but yeah, starting to realise that fermenting is a bit of a finicky matter and things like climate can make it or break it. If you don't mind me asking, do you perhaps have a favourite recipe you'd be interested in sharing?
@markkindermannart4028Ай бұрын
@@Braham_the_Terror It sure has a changing learning curve to it! For a recipe I think you can choose interesting aromatics. Polish people put dill flowers, and fresh horseradish. You need tannic acid as well to keep the cukes crisp, so use at least 3-4 bay leaves. I like 2.5 TBS of salt per quart of water. Experiment, watch this video again! Cheers

if you wanted to make this vegetarian, what would be a good protein to replace the chicken with? Beans?
@NathanWalla11 ай бұрын
You know that’s a good question! I never cook vegetarian but I would make a fresh broth using garlic, onion, celery, and carrots. And probably go with extra corn and black beans! Maybe throw some red and green bell peppers in there. If you are pescatarian then then I would make a fresh broth with shrimp! And use a white fish as the protein
@tessiepinkman9 ай бұрын
I've been vegetarian since I was 14 _(33 right now, born -90),_ and when in doubt; use beans of different sorts, lentils, mushrooms _(mix and match or just use one sort, or none at all if you don't like it)_ and/or well-pressed *firm* tofu that you cut into pieces of your liking. Add the tofu when the temperature has been lowered on the stove and let the tofu soak up all the tastes of the soup for a while, the longer the better, and then add your precooked beans, precooked lentils and raw mushrooms and bring it to a boil until the mushrooms are cooked. Then it's done! That's my go to way to really fill out a dish, by picking many different sorts of protein rich foods - like beans, lentils, tofu and mushrooms. It has the added benefit of adding different textures to your meal. You can basically make anything completely vegan/vegetarian with that simple trick. But don't forget to REALLY press all the water out of the firm tofu, otherwise it won't soak up all the wonderful tastes as well as it would have otherwise. But then again, it's great to just use one or two of these things too! Chickpeas are a fantastic substitute for proteins too that I didn't mention. Well well, I hope that this was at least _somewhat_ helpful! :)

Hello! I was just wondering how much honey do you usually take from the hive, and how much do you leave for the bees to go thru winter?
@NathanWalla11 ай бұрын
We usually get about 20-30 lbs per hive and leave 50 lbs for the bees. In the summer the hive starts running out of room because there are so many bees (up to 800000) so we put another box on top to give them space and they fill it all the way with honey. In the winter the hive reduces down to the size of a softball about 30000 bees. If they are having a tough winter or summer we will also feed them with pollen and syrup. But we’re we are they have a very mild winter so it’s not really needed.
