Well yes, that is absolutely true - more practice is always needed :) This video was made back in 2014 when I was still learning how to make pizzas and more specifically how to do it well in a wood fired oven. I'm happy to announce I have improved substantially since, but have not made any new pizza videos to demonstrate my improved skills. Thanks for watching and commenting!

4:25 shows no air in the crust and I knew that would happen when I saw you stretch the dough, you did not push the air into the crust you pushed dough! It was solid. Anyway, who cares i'm sure you are a great guy anyway, Italian music is awesome.

Hahaa yes indeed, this was in the very early days of my pizza making career, way back in 2014. I was using too much dough per pizza, and didn't really know what I was doing. Back then there was not much content on KZbin to guide me, so I was making it up as I went, and learned everything myself the hard way. One of these days, I'll make a new pizza video - or not! Yes, this was all shot in the northern part of Abruzzo, in the provincia of Teramo. I have never been to the regions South of l'Aquila, but definitely will one day. I'm very interested in Sulmona, Caramanico Terme etc. Thanks for watching and commenting!

PA riding tips: - watch out for gravel! After rain it’s everywhere - Deer are lurking everywhere. Just because you don’t see them doesn’t mean they aren’t there! - wooden covered bridges require a bit of practice. Go slow! - Amish country presents unique problems, such as buggies, horse poop, and guys using mules pulling trees across the road around a blind turn. And once at an intersection I almost got run over by a guy in a buggy. It was late at night, the driver was fast asleep, and the horse was heading home in his own. Evidently horses don’t see of acknowledge red lights! - a 15 mph curve sign can be either an easy 35 mph curve or an honest to God 10 mph curve. Ride accordingly! - riding on a newly grave led-and-oiled road is not only like driving on marbles, it also makes cleaning your bike an all week chore PA is a bikers paradise. I can go out on a Sunday morning here in Perry County and ride mountain curves, twisty two lanes, and gravel state forest roads for hours without seeing another car, all within just half an hour from home!

you can tell nobody watching makes pizza dough...at 0:58 your video said to add 2 LITRES of water at one point. This would be 200% hydration and would be nice for crepes but isnt going to form a pizza dough, ever. That jumped off the screen to me.

Yes indeed, there is absolutely an glaring error in the titling in the video, of which I am well aware. Back in the day, KZbin had a feature that allowed comments to be added on top of the video, and I had a very obvious correction that popped up at 0:58 that read "2 Cups NOT 2 Litres". Sadly that feature has been disabled in KZbin, and there is no option to actually replace the entire video, as can be done on Vimeo :( HOWEVER: I went to the trouble of typing the entire recipe with correct measures in the video's description, so anyone interested in following can check the description, copy/paste/print it if they like. Happy Easter Thank you for this video. Could you please give me the weights in grams for all the ingredients? im so used to weighing out things on my scale from Fidel's videos haha my dad has an FJR too!

Thanks for watching and commenting! Everything you're looking for is in the video's description. The only ingredient I've listed that is not in grams is the water, but 1ml = 1g. Note that I've recently been using 1/4 cup more water than the recipe in the description, making for ~ 66% Hydration: Flour: 1000g (100%) Water: 658g (65.8%) Salt: 15g (1.5%) Sugar: 2g (0.2%) Are you using a Wood Fired Oven? What flour are you using? Cheers!

Thank you for the weights it's much easier to read like that haha I'm using Caputo 00 blue pizzaria flour and I'm finishing it in my Roccbox :D next year after all this blows over I want to open my own pizza stand (video game themed) at the Farmers Market and give back to the community and keep people's tummies happy. Couldn't do it without my Roccbox tho

Very cool! I'm kinda itching for a Roccbox myself, so I could be mobile. Are you using gas or wood? Still using my Chicago Brick Oven tiny wood fired oven, and wishing it was a lot bigger. But I've gotten better at managing it over the years. I also use a thick polished steel slab in my Wolf electric wall oven inside. This is similar to Baking Steel's product, but I made it myself. Works really well actually, and far better than a pizza stone. I can get it up to almost 650F by playing with the broiler. Cool that your Dad also has an FJR. I love that beast, even though it is 15 years old! :)

@@blathermouthI'm using Propane and Propane accessories 😂 You should probably look into a OOni 16 if you wanna make big pies with gas. Seems to work well on the pizzamaking forums ! That electric one sounds pretty bad ass for convenience I don't think I can go back to electric unless it's that expensive breville or something haha

I wish I had read the comments before jumping in. So 2 liters of water , if you want to use them be prepared to add an additional 10 CUPS of flour. I figured after that mess might as well keep going. If it turns out well we can have pizza dough for the rest of 2019! Next time I’ll just follow the pizza recipe on the side of my bag of Anna Napolitana 00 flour, I’m going to take a wild guess, it’ll be waaaayyyyyy better.

As KZbin does not allow the updating of the actual video, I used the only tool I could which is to overlay comments with the correct measures, most notably at 1m00s. For some reason, it seems that some viewers are not seeing these at all though and I have no idea why. But hey, the full AND CORRECT recipe is in the description below the vid. Thanks for watching!

hey mike, same problem with the moisture content... i live in the south---again, maybe that's the problem. there's just too much water content for 1 kg of 00 flour here. I ended up having to stepwise add all purpose flour b/c I only had 1kg of 00

Sorry to hear that, but thanks for taking the time to comment! I hope you followed the written recipe in the description, taking note of the error in the video at the 1m00s mark, where the original video shows "add 2 Litres water" when really it should say "add 2 CUPS". I follow this recipe quite strictly, and it almost always works perfectly. The exception is when I have to use a different brand of flour than I'm used to. Hopefully you can adjust the recipe to suit your environment and your flour. Once you get it dialed in, you should be able to repeat it every time. I always make notes about what brand of 00 flour I used, and if I adjusted anything, along with observations about how it turned out. I find certain flours require more/less water, but it may well also be weather/humidity related. Good luck!

Thanks for watching and commenting Loretta!! Unfortunately this dough does not keep at all. I once tried freezing it, and it was awful when I thawed and used it. Even when I make several batches for a big party, it can be difficult to time the various batches of dough so that it's not "blown" by the time I use it. On these days I keep batches of dough in balls in the fridge (in sealed trays), and try to remove them to room temperature about 3 hours prior to using. After about 6 hours the dough is pretty lifeless, and rather than being a soft little puffy round cloud, it starts to look like a flat sticky pancake.

Yeah that was early days for me with a wood oven. I make them quite a bit thinner now, and also use a piece of angle iron to shield the pizzas from the fire in my tiny oven. Thanks for watching and commenting!

What a great video. I have been to Samana and stayed at Cayo Leventado island across the way from your hotel. I am staying there again this coming February 2018. You have shown me parts of Samana that I have not seen. Good editing and good choice of music.

Thanks David! We really liked it there, and the area is really fantastic. The quad outing was one of the best things we did, and it took us to an unbelievable beach on the North side of Samana peninsula, that was totally deserted (in video where the guy was cutting the coconut). We've thought of going back and trying Cayo Leventado next time. Thanks again for watching, and taking the tome to comment!!
