if you get those code snippets the author tells you generally how to compile, etc. Of course besides I covered lots of topics on kernel dev. So when you try to compile and make it run in different kernel (newer or older) than that code snippet. You usually get lots of or few errors. Which you can try addressing one by one. As I said it is good so that you can take that as a project/exercise and try to accomplish. This really mimics what really you do in a real industry as a part of your routine job as a kernel dev

that is a good question. Unfortuntely the industry much does not distinguish what is a easy path vs what is a difficult path. At times you find people doing simple things (sort of), getting hugely paid, vs someone who is doing extremely niche hard & core stuff. But at times job market is also about supply and demand. Now there is demand for AI, data-scientists, etc. Image after 5-10 years that gets so common, everyone would be an expert in it, so that job market loses its charm. Due to over-supply the payment also gets nominal and it will hard to get job due to competition. But in the case of systems software dev (which encompases like you mentioned kernel dev/ low level systems/embedded etc), this is always first hard to learn, and niche, so there will be limited supply and limited demand as well. You see its like an sanyasi/aghori's path. Not for everyone.
