Rice is also something I use to double the servings of soup and chili. Fill 1/3 of the bowl with rice and the rest with the main course. Cooked rice freezes well. It becomes more firm from losing moisture, but I like when that happens. Great for fried rice. I replaced my microwave with a 10-cup rice maker. It's nice not having to babysit rice on the stovetop anymore. In recent years rice has become a bad word to many people. If rice was so bad, most people living in Asia would be diabetic.

The homeless ministry in Florida where I took the chili did not serve rice with their chili. I also cook meals for the homeless ministry when I have a chance at my home church in Maryland. We always serve our chili on top of white rice. In our cold temps, it is a great way to add additional carbs for calories to ward off the cold. That is not necessary for the milder winter temps in Florida. If I had a large kitchen prep area and stove, I would have prepared rice, as well. Having a rice cooker was not one of my kitchen appliances back then. But I have one now and absolutely love it!!♥♥

It's nice not having to cook but maybe once or twice per month. I should do as you and cook for the homeless. There are more homeless people now than ever before.

@@Bishopking2 I cooked it in the pot I used for the chili. I have a large skillet. But it is not large enough to cook 10 pounds of ground beef without doing it in multiple batches. It was easier and faster to do it in the pot.♥

First time gardener here and I harvested the outer leaves of my cabbage while waiting for the head to grow. To my utter surprise they tasted like collard greens 😂😂😂😂. I was so confused!!

They absolutely do taste like collard greens. It has been quite a while since I have purchased "collard greens'. I always check out the cabbage section to see if there are any "discarded" leaves. I try to go Wednesday thru Friday midday. I buy as many as I can stuff into plastic produce bags. Sometimes, I will go to the cash register to get store bags instead because they are much larger and won't tear. Cabbage collards are so much less expensive and just as nutritious. I check the shop and car park floors and self checkout area for unwanted coupons. Sometimes I can use them for my own benefit, other times the item on the coupon gets purchased then donated to the foodbank (or rehoming shelter if it’s pet food/treats). If I’m unable to use them I don my coupon fairy wings then by way of leaving them under the relevant item on the shelf so someone else can benefit from them

I was at a grocery store about 10 years ago when I saw a pile of cabbage leaves near the cabbage in the produce section. I bagged as many as I wanted and bought them. Because these leaves are tougher than the head, I shred and start cooking them first and add the shredded head and other ingredients after about 20 minutes and cook to desired doneness. Chopped onion and bell pepper are two of my favorite ingredients. I often use smoked turkey with them, but I can eat greens without meat.

Lovely video. Looks delicious. We do competitive chili cook-offs, if I were reproducing your chili for a cookoff, I would drain the beans before adding them, and I would use ground pork (less expensive, less fat, great mouth feel). Regardless, your chili looks wonderful, thank you for sharing! 🙂👍

Great tip! I would definitely go for this. Especially, if I were not feeling well. My husband was so ill this past summer that he was unable to chew for more than a few seconds. This would have been awesome since he was really hungry but unable to chew.🩷🩷

I will need to omit the shrimp because I am allergic to them. When I attempt to make it, I will be sure to tag you. I also revisited your reply about the Sweet Tomatoes Mushroom Soup. I have 3 different types of mushrooms in my fridge arsenal at the moment. Last week, I went home and shopped at my favorite "exotic" supermarket, HMart in Maryland. I bought shitake, portabello, and oyster mushrooms. I bought them to make Mushroom Bulgolgi a Korean dish that I love but my hubby, not so much. But I will have more than enough mushrooms to try the Sweet Tomato Mushroom soup. Oddly, even though we are staying near the coast of SC (within 9 miles), we have been really hard-pressed to find fresh oysters and clams. I will try again this afternoon and hope the shortage was temporary due to the holidays. By the way, the Bernese Mountain dog is one of my favorite breeds along with the golden retriever.

This is definitely the time of year to serve chili. I have never made cabbage rolls. I don't know why... I need to make some more chili to freeze for two, my husband and me. I made a variation of this chili recipe for Vacation Bible School a few summers ago for 125 kids and their instructors. We wanted the chili to be healthy and some adults suggested that I not use any beef or pork in the recipe. So, I only used ground chicken and turkey. To make it even more healthy I used equal parts frozen mixed vegetables like you buy at Sam's or Costco. I ground up the veggies in a food processor while they were still frozen and added them to the chili. The veggies must be frozen solid or else you end up with mush. With all the beans and tomatoes and tomato sauce, the kids never noticed the ground-up veggies. I got so many compliments and requests for that chili recipe. Only the adults knew there were veggies in the chili because I told them. Otherwise, they would not have known either. I will try to remember to see if I can find that video and post it or at least post the recipe.
