Test this: Don't wrap just smoke at 225 or 250 if you wanna move a LITTLE faster. After you hit a stall for a while just keep going till 175/180 fat content plays a roll. I prefer beef ribs but it's interchangeable. Try without batter, my family likes them naked. After stall let cool, pat dry'ish. Then 375/400° in peanut oil for ~5 mins or a little longer if your oil isn't fresh. Know your equipment and cook safe, cheers 🍻 😀 Edit: only pre season with salt to save oil for longer or another session. If last use on oil, use any seasoning you'd like.

A technical question ...... why brown the shrimp heads & shells in a skillet. Why not just brown them in the stock pot, retain the fond on the bottom and skip a step ? In fact, the vegetables too?

Maybe to have the stock pot cold? If the stock pot is hot when you add the water, it’ll bring that same water to a warmer temperature.Which is a no no since its alway best to have the water cold for a stock. I guess you can also just use ice or very very cold water. Thats my guess anyways, cause you bring a very good point,

I don't like doing different kinds of rubs. but you got to, to fine the taste your looking for. Once i find it > i stay with it.. You can always go to the " ingredients " on the back and make your own! Some times its even better tasting

Yes, but only slightly. optional, but that is the standard as even storebrought stock is slightly seasoned. But it's your stock, make it how you like.

Pepper yes, salt only minimally - because if you're making a reduction sauce you can end up with too much salt after the evaporation, and you can't take it out! This from my chef son.

No! Stock is an ingredient used in various different recipes. It's better to season your soup/sauce after adding the stock. You have more control that way.

I love beef ribs and I would love to have one of the beef Dino ribs someday the bigger the beef rib the better I think cuz in stores when you buy beef ribs they're just still thin there long but they have hardly any any meat on them and to see this that's so enjoyable and I bet so delicious

Best beef 🥩 meat I ever had was in Texas. I was traveling from Los Angeles to buy myself a small bay boat that was priced like I could afford it for Ben after travel expenses, so my puppy 🐶 and I made the 1600 mile trip to clear lake Huston Texas. I love ❤️ bbq and meat, and we ate meat all over the state we traveled to and stayed at over the night. Austin Texas I had a Texas cow meat that was 22 oz and needless to say, I finished my steak 🥩 and everything it came with . I usually eat like a 8 or 12 oz steak here in California and I’m Bloated. I’m 6,3” tall and 250 pounds plus, you do the math 🧮 When I travel to Europe, I can eat close to 10 pounds of meet while eating bbq in 1 night and I still Loose weight, perhaps 🤔 lots of walking helps, or just grass fed beef that doesn’t have as much calories at the one in California that look 👀 like body builders lol 😂
