This tasted very English and stayed more the consistency of salad cream for me. After giving it a few minutes, I transferred it to another container and used my hand-blender on it; it changed it into more American mayo consistency. (I also added garlic and a bit of sugar; the vinegar AND lemon made it too acidic for me.)

Always scald the buttermilk and milk before using it in bread, or for milk, use dried milk as the pro's do. The scalding breaks down the glutathione which depresses loaf volume. Such a shame you made this as a soda bread and not a yeasted bread as it should have been. A yeasted bread is so very much better. Also, for a soda bread like this it is important not to develop the gluten which will become strong and whose elasticity stops the baking soda raising the bread so much. Just gently incorporate the ingredients and bake. Of all the bread recipes to demonstrate a mixer a soda bread is the only one which should not be on your list. This is a v e r y silly video in Monte Python terms.

Is the oven temperature for a conventional oven or a fan assisted (convection) oven? I live in the U.S. and I know I could look at the U.S. recipe but KitchenAid USA does not give weight measurements despite the fact that they sell that sifter scale attachment here. This video looks like a stock video that was possibly made in the U.S. judging by the measuring cups on the counter.

make a burr grinder, blade grinders don't work for many brewing styles, such as espresso. Also they have many inconsistencies in the quality of grinds. A cheap burr grinder beats the best blade. thank you.

Is it the older K5 SS style mixer? Those had pretty much the identical head tilt heads along with that silver drip rank on the front and the back cap. The screw on nose is actually located vertically what's above where the top of the bowl raise mechanism meets the mixer head you should see it. Basically loosening it a little will prevent the bowl lift from going all the way up as it rests against the head of the screw. What's the mixer is old enough to have been made by how about it may not even have that screw.
