No way do pizza places where I live on LI sell dough for 1 or 2 bucks. I wish! Maybe 20 years ago. You can occasionally find dough in supermarkets for a low price though. But straight from the pizzeria would be the better option

Solid recipe Mike. Evan here with Pie95Pizza. We add the evoo in the beginning with the yeast. Finishing at the end is waste of time for me. And that salt and yeast thing is an old wise tale 💪🏼

I think pecorino should go on the sauce or into the sauce. Gives it a presentation just flavor into the sauce versus below mozzarella. But everyone has their style.

Great video you shared what tomatoes to use but no sauce recipe, you shared cheese types but no combination of cheeses or cheese brands or hard cheeses and your favorite brand, whether to use cake yeast or active, please share this information. Noel you were great on dough temperature of 78 to 80 we all know that is the best temperature for dough to rise, many professionals recommend this temperature for most doughs some style of pizza vary but this is the accepted temperature. Please share points I have made thanks....

Serious bakers use accurate measurements. My cup of flour may be different than yours depending on many factors but 640 grams of flour is always 640 grams of flour.
