You need to brown that meat! Putting it in all at once with all that veg means it boils not fries. Brown the meat first in smaller batches on a high heat. You get the Maillard reaction which gives you the flavour. Put it aside and then fry your veg.

Yes I’m aware of frying the pancetta first. However, I assure you that the bacon, in the end, was not steamed but carmelized
