I'm going to try this today.... but why do you say "1 hr" in the oven in the video while the recipe works out at about 2 1/2 hrs for an 8 lb ham? It's lucky that I checked the actual recipe and didn't depend on the notes that I made from the video itself!

Well... I tried it and it was very delicious... everyone loved it. The only issue is, as I mentioned above, the timing. For my ham, which was 4.1 kg (about 9 lbs), after 3 hrs @ 165 deg C it was still at 40 deg C internally. It started at 9 deg C after having been taken out of the fridge about 3 hrs before starting the cook. So next time I'm going to have to really adjust my starting time accordingly. (Note that I was using a gas roasting grill. Maybe it's "oven" thermometer is inaccurate but it's pretty new and I did some roast pork a couple of weeks ago very successfully, so I'm sure it's not TOO far out).

People who sucked at cooking asked professional chefs how they made their rice. The chefs, wanting to make it seem more complicated than it actually is (because they could be out of a job if everyone knew how easy it was to cook rice) made up a load of crap about washing rice. And I know this because EVERY time I wash my rice before cooking it, I screw it up somehow but when I DON'T wash it, it cooks PERFECTLY. Coincidence? Or conspiracy? You tell me!

Fresh herbs going to burn. Always salt your meat 24 hours in advance. Reverse sear in the only way. This is amateur hour here. I would not follow this recipe.
