I love how Asian people treat fish like us wogs treat lamb and goat. Always a prepared sauce, a marinade sauce, a sauce for the sauce, a sauce for the rice, a rice for the rice, a rice inside the rice with a rice. Lots of onion flavours, lots of garlic flavours, lots of fermented flavours. Then a warm rice pudding after. Good to see that you treat what you catch with a lot of respect. I'm a chef by trade and I steer clear of anything seafood related based purely on preptime and precision. So kudos to you. (side note: Asian restaurants are always dubious of the amount of food I order and eat. "This strange Turkish man out here wants 4 mains WITH rice and flat noodles, plus entrees, chicken skewers and a fish dish!!" Just treat me like a little fat Chinese kid! Thats all I ask.)

I moved to Melbourne from the US about 8 years ago and funnily enough i've never seen a crayfish here even though im a pretty avid diver. I'm used to American lobsters but I had no idea these got so big! They're massive!
