Watching Mino in his videos is a joyful antidote to all that seems so wrong in the current world. I just can’t help smiling with happiness when watching him. Oh and the knives are pretty awesome as well. 😊

Great sharpener, but 6-8 times means forward and backward as one. So 12-16 total swipes on the stone.

I bought it, i tried with a blur knife but it couldn't get it sharp, had to sharpen it up, then it could, BUT I still had to use a horning rod, if you had put another keramisk hjul på, ville den få det sidste touch

My little sister just passed away and in her tiny flat she had a set of 21 global knives in the case that I was left. I don’t think she ever really used them as she had her go to cheap knives. I’m exactly the same and it does seem a shame these amazing tools don’t get to work in a proper kitchen like they should . Learning about mr global and his passion was so cool .

I went through 3 different $20 pull-through sharpeners of various brands. All give sub-par results and eventually go blunt making them useless. My brother who knows how to sharpen knives by hand professionally advised to me by "Minosharp 3 Stage Ceramic Water Sharpener". He uses this instead of hand sharpening now. I got one for $40 usd on ebay. It makes sharpening easy and effective and the knives stay sharp longer.

Awesome sharpener, I just use in place of a honing rod and it keeps them very sharp. Then once a year I’ll give them a proper sharpen

What numbers to buy for the whetstone? For house use buy 400/3000, 600/4000 or 1000/8000? Thank you.

1000 Grit is a great general use coarseness that will help keep home knives sharp and ready to go. Lower grits like 220/240 are for reshaping very blunt blades or for very heavy commercial use that often dull blades through extreme use. Higher grits are for more precise blade polishing.

How do you clean the ceramic wheel stones after they build-up deposits?

Hi! You are able to remove the wheels and a bottle brush or something similar should be able to clear out any debris. Over time, you will need to replace the wheels as they do wear out - they are available online at our website.

I'm really pleased with this! It works like a charm kzbin.infoUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ Takes less time than my old electric sharpener because it can take more off the knife faster, and then it smooths out nicely with the finer grit polisher. I don't know how long it will last before the grit wears away, but I wouldn't mind having to replace it every once in a while.

Any time I hear an old Japanese man give a class like this, I always pay attention because I know I am in the presence of greatness and a grandmaster who is highly dedicated and highly experienced. 🇯🇵

Western chef-style knives usually have a hardness around 55-58 HRC. Japanese knives around 62-65 HRC. This makes Japanese knives harder to sharpen, but also means they will retain their edge longer. The relative softness of Western knives is the reason you see chefs using a honing steel to touch up their blades frequently.

Contrary to popular belief, a honing rod hones the edge of the blade, it does not sharpen it. It only seam so because the cutting edge gets realigned.

I bought one many decades ago when they first came to the UK, they were of course premium quality, looked radically different and expensive but perhaps not as expensive when they first came here they were something of a premium bargain… two decades later I am still using the very same knife and added others to it. Great tools.

Thank you... This video has helped me make a decision on what brand knife to go with. There are so many brands and companies out there, and the task to pick one is daunting, especially without purchasing from them all, but this video was heart warming and very human. I now want to give Global brand a try.

i know the knives are from japan, but the stereotypical 'japanese' music doesn't add anything to this. instead, it's too loud and overbearing. maybe go with something more subtle and not so stereotypical.
