One difference is my mother would smush the garlic & leave it in the sauce & also would sometimes garnish with lots of herbs pero I don't remember which ones 😭😭😭

Thanks for posting. I followed your recipe, and am looking forward to trying it in your Puerto Rican chicken soup recipe. I could not find the habeñero pepper when I was shopping, but I used the Hatch New Mexico peppers, which are really special when you can get them in the southwest, and California. They love them so much in NM they even put them in milkshakes.

I love blue steak, but that pan was not hot enough to leave a good sear. Also for really fatty meat like wagyu i believe just Rare or even maybe medium is better. For a high quality dry aged steak blue rare is just the best.

Add a minute or so on each side. But if it cooks too much - it will be VERY HARD to eat… like sole of the shoe.
