A steak is supposed to be at room temperature, so if you take it out of the fridge 20 mins before cooking its not at room temperature...try 4 or 5 hours Gordon.

what's your fridge set at? 33deg F? what's your room temp? 60deg F? 70? stick a meat thermometer down into the center of your steak lengthwise/sideways not top down... so the probe runs the whole length of that meat. now let it sit on the counter and THEN tell me when the core of that cut hits room temp. mmkay? was that 4h? nope. unless you're cooking from frozen, or your cut of meat is a 5" tomahawk chop... or a whole freaking roast. room temp is by SURFACE TEMP to the touch with your fingertips. NOT the whole cut of meat is as warm as the room. sitting the meat out on the countertop for hours on end is just begging microbes to wake up from being dormant in the fridge due to the temperature and humidity and breeding and eating like mad... leaving their poisonous waste products behind. i dunno what kitchen you were trained in, or how you cook at home... but if you're leaving your meat out on the counter 4-5h every time you want to cook... damn... you better be waking up at the crack of dawn every day you want steak n eggs for breakfast to... set that meat out on the counter for 4h.
