Hey Kaitlyn! Did you freeze your icing in a big container? When I freeze mines in piping bags they are pretty solid. If I freeze in a container it’s solid but not like a block of ice and it defrosts pretty quickly. Also it is normal for it to be runny after defrosting, once you stir it up it should return to normal.

@@itsjennwbrown thank you for the response! I stored it just in the piping bag nothing else. It felt stiffer but never froze solid. I didn’t realize I had to remix it 🤦🏻‍♀️ that makes sense! Now I know for next time.

Hey the brand I used is no longer for sale but try dazzle dust by Jenna Rae cakes.

You can dry the cookies by just letting them sit out overnight, don’t put anything on top of them that will touch the icing like plastic wrap. I like to use a dehydrator just to quickly dry the icing if I’m adding multiple details and I only let them stay in there for at the most 10 minutes. And then they sit in my cookie rack and dry overnight. They need to dry for hours so the icing will get hard, no quick way. Thank you so much for watching my videos!

Hi Kathy, wait at least 8 hours, if you are short on time put in dehydrator for a few minutes and the top should be crusted enough for you to write, but keep in mind underneath the top, will be wet so you won’t be able to scrap off letters if you make a mistake.

You can try to scrape the crusty surface off and try to save the bottom, but if it is too hard the pieces may not break up even if you add water. That could cause hard pieces to be in your piping bag, so you may need to mix new icing.

@itsjennwbrown I didn't use meringue powder, I basically whipped up the pasteurised egg whites with bit lemon juice slightly, then add the icing sugar gradually till it thickens . Probably the sugar on the spatula I use to scrape the sugar down while whipping dried out , and I mixed it in every time I stopped to check the consistency
