the depth adjustment mechanism on my Matfer 2000s is designed so poorly that there's tons of play on 2 different parts of that mechanism, meaning the main plate that you slide food down is never perfectly parallel with the cutting blade, so nothing i cut has a uniform thickness. it's mainly a problem when cutting super thin (so one edge is just too thin or gets cut off completely), and it's especially obvious when doing cross-cuts (one side has holes all the way through, the other side doesn't). hopefully it's been fixed in later models but i can't believe the design was approved for actual production with such an obvious defect i've used cheap mandolines and i'd take a $30 one over an expensive Matfer any day

It's a great mandoline. I bought this very model in ~1996 from an independent, bougie kitchen store in Atlanta GA. It came with this instructional video on a VHS tape.😅

@HubertCompany Why didn’t you temper the steel over the high heat gas flame to oxidize the interior pan surface. We do that with carbon steel woks and skillets to prepare the steel to better accept the thin oil coats that we follow by wiping that oil off. We follow that by inverting the skillet over a medium heat gas flame until we see that wisp of smoke.

I've just been reading about oils for seasoning. The thing about flax seed oil (linseed oil) is that its smoke point is only 200°F - 250°F. If you cook at temperatures above that, you're compromising the seasoning. Oils like canola (rape seed), peanut, sunflower, safflower, soy and avocado oils all have smoke points over 400°F; avocado is pushing toward 500°F.

Thank you. The first video I found focused on using the top nut(?) to screw down on the rubber part, but my hand strength, even with channel lock pliers could barely get the expansion to budge the little that it did. It's good to know I have other options. What should've taken 15 minutes to assemble has turned into 2 days because I had to wait for the channel lock pliers to arrive. Most frustrating! Thanks again.

Thank you for having an easy to use sizing guide i work in a factory and use gloves on a regular basis for a lot of different tasks(handling chemicals to protecting the final product from hands) and not a whole lot of brands have a handy guide.
