Nice! If I were you, I would get Maxxis. They are a bit pricey but they do provide good traction and grip in my opinion. They even prevented me from falling a couple times. They also last quite long.

I hold my phone in my dominant hand and just go at a medium speed and with my non dominant hand, I keep 2 fingers on the break but not riding the breaks. I keep my middle and ring finger on the breaks. But just be relaxed when filming and it will become more comfortable and steady.
