Thank you for your clear and detailed guidance! I have one question: you recommend cleaning an unglazed tagine (once it has been properly seasoned) with soapy water, and warn against using a scrubber. Another video I saw (from Azlin Bloor) said exactly the opposite, recommending a scrubber and strongly warning against soapy water (even after the tagine has been seasoned), as the clay is porous and the soap would seep into it. What might account for the difference? I'm wondering whether soapy water is ok to use if the clay is well seasoned (oil should seal the pores), but may not when the pot is still warm (maybe the heat causes the pores to open up more)??

It’s true that clay as pours but it’s still very much recommended to soak in soapy water, the water and soap gets in but than when you rinse it out the soupy water will be rinsed as well through the pours. I still have my mom’s original clay Tagin, it’s at least 80-90 years old, she brought it with her from Morocco, when she passed away I got all her culinary stuff. Clay is very tricky but if handled right like my mother did it last many good years. Please watch my - all about Tagine care again, I showed my mom’s tagine as well. I appreciate that you are preserving the good old Tagine method of cooking, the flavors of a tagine cooking are very tasty and it the one cooking method that preserves food that cooks in its own juices, are you subscribe.?

Your video made my mouth water! I fell in love with tagine, as well as other Moroccan and Mizrachi methods when I visited Ha'Aretz as a young man -- I can't wait to try this one myself! I'm thinking this would be a wonderful way to make my ma's tzimmes (brisket, prunes, raisins, apricots, cinamon). Do you think it would work well for this?

INGREDIENTS 5-6 chicken thighs 3 Tbsp. coconut oil or vegetable oil (I use coconut oil for more flavor) 5 large onions, sliced 2 Tbsp. vegetable oil (no olive oil for this recipe) 2 Tbsp. sugar (preferbly brown) 1+ 1/2 tsp. cinnamon 1/2 tsp. turmeric 1/2 tsp. salt 1/4-1/2 tsp. black pepper 1/8 tsp. saffron- optional but recommended 2 fresh tomatoes, chopped 💕My Shop for Jewish related clothing & Judiaca gifts ideas in Hebrew & English:- tee.pub/lic/sephardicbalabusta How to make Slice onions, place in a pot add coconut or vegetable oil Cook uncovered on low to meduime for one hour (careful not to burn onions) Mix onion every few minutes In a separate bowl add all spices & 2 Tbsp. vegetable oil (do not add tomatoes yet) Mix spices well Add chicken thighs to spices, brush well Place chopped tomatoes ON onions Lay chicken on tomatoes, do not mix Do Not Add Any Water! the onions will release plenty of water Bring to a boil, reduce heat to simmer, cook Uncovered for 2 hours Baste wchicken with sauce every once in a while buy DO NOT MIX The sauce will start thickening, keep reducing to desired texture. Really appreciate this recipe. I enjoy making items that are Pareve as they are versatile. Just an FYI, you can also add 1/4 cup of chopped cilantro and 2-3 cloves of minced fresh garlic to the batter. It reminds me of a Kugel more than a quiche but you can call it anything you like, just remember to call it delicious.

If you soak the potato skins in warm water for 6 to 8 hours, when cooled use to water your house plants. The potato water is filled with vitamins and minerals for your plants. Rice water (that you rince the rice from) is also great for your plants.
