Carne guisada does not need tomato. A green bell pepper is a waste of time. Use NM green or red. If you want green, the pepper should be fresh or frozen. That's difficult to find in Texas.

How would you compare Champs to Boarri meat market. Is one any better than the other?

Boarri mainly sells unfrozen meats. Champs sell both frozen and fresh. Both places have excellent meats.
