They look really great Mandy! I'm from Perth, Western Australia; we love our lamingtons. I have to confess though and say I've never made them from scratch; just bought them at the supermarket, although after seeing you do them I'm going to try 😊.

@@Sookie2024 i had the worst christmas dinner ever this yr...we had steaks as everyone was saying they were bored shitless with turkey ...the steaks looked good but they were shite once cooked and lots of gristle...no one liked them lol ...i sliced the leftovers up and made a banging chinese beef curry with them on boxing day😋......

so look..for me a corned beef pie is mashed potato combined with mashed corned beef and bunged into a pie or a nice dollop between two sheets of puff pastry for a pasty ...also a pie for me must have pastry bottom and top 😉.

@sheepunit7966 hmm.thats why I said in the beginning that there is alot of variations that have come to pass over the years.we used to call it tatie ash 16:17 pie, or just tatty ash before the pie was added.40 years ago I was brought up on this recipe but with carrots which I forgot, ask my mum,she is in the comments.MUM @margeretashton he's picking on me lol

Our neighbour makes a lovely corned beef slice. No onion but she puts leek in and it's seasoned of course. Baked in pastry, it's a legend here at local fetes !
