----- Recipe ----- - Add 1/2 tbsp of salt and some vinegar to the chicken gizzard and mix well together. - Peel off the skin that is on the chicken gizzard. - Wash the chicken gizzard with water and drain (do this step twice). - Add the chicken grizzard to a pan, pour in some hot boiling water. - Season with a pinch of salt, 1/2 tsp white pepper and 1/2 tsp nutmeg powder. - Leave to boil between 15 - 20 minutes on high heat. - Add the boiled chicken gizzard to an oiled pan and fry until they have slightly browned. - Add 2 cloves of grated garlic, 1 tsp grated ginger, 1/2 onion (diced) and 2 green peppers (chopped) and stir it well together. - Add 1 hot chilli pepper and stir together - Add 2 tomatoes and stir together. - Season with 1/2 tsp white pepper and 1 tbsp chicken stock powder and stir together again. - Add 1/2 a cup of water to the pan and continue and stir occasionally until the water has evaporated, and the chicken gizzard is tender.

To make the sauce, to a bowl add: - 1 tbsp Brown Sugar - 3 tbsp Soy Sauce - 4 tbsp Honey Mix well together. - Add some Lemon Juice and mix together. - Add 5 Cloves of Garlic (Grated) and mix together. Add some butter to the pan and then add the sauce. Make sure to occasionally stir and flip the Salmon on both sides. Add some slices of lemon to the pan and continue to fry the Salmon until the sauce has become sticky - the approximate cooking time is between 3 - 5 minutes.
