More than likely they did it for the time lapse. It’s better to harvest right before the bowl breaks because they will be more potent per dried gram. Once the mushies start dropping spores they stop producing psilocybin and psilocin, they will still continue to grow adding more weight but no more magical ingredients.

Allowing the veil to rip releases Spores which will lower the amount of flushes you will get from your harvest. Spores tell the mycelium to stop producing mushrooms because their job is done that fully colonized their substrate, by not letting the veil rip It allows you to get higher potency and more yields
