GREAT QUESTION!! When you are using an acid like vinegar or lemon juice, that prohibits the growth of bacteria. Also, salt acts as an antibacterial. Keep it in the fridge, and it's 100% safe. Thanks for visiting!!❤

@@readbetweenthelines385 it's a table my husband built, a little shorter than a standard counter, and pretty beefy. Anything store bought would have to be rated for 100+ pounds. Im short, so a counter position for the mixer is too tall.

Yes indeed! There is an honesty box on the side of the cart, and I've never had any problems. But we moved here from another state, and no way would this concept have worked there. We're really lucky and blessed to have such a great local community. Actually, there are lots of stands around like mine with honey, maple syrup, vegetables and even flowers! Thanks for visiting!❤

@MarkTorres-t2p for a 6# batch: 4 pounds venison 2 pounds pork fat 1.5 T black pepper 2 T salt 1.5 T fennel (ground or whole) 1.5 T crushed red pepper 1.5 T oregano (I used Italian seasoning) 1.5 t paprika (I think it needed lots more) 3 T garlic powder 1.5 t onion powder 1 T dried parsley 2 T brown sugar The men did the hand work so I can't help you there, but this mix was good. It depends on the ambient temperature/time of year. I use the standard 2 hour window, with chilled product refrigerated in my house, then rotate,cool, repeat. These items have a lot of sugar, as well. I'm fairly limited with what I can offer because of that, and generally don't do cakes in the height of summer, but that's how I work it. 😊

You're absolutely right. Although planning sometimes fails. I spent 6 months making payments on a side of beef and a pig to be delivered for my freezer only to have the beef not materialize and the pig went moldy. Yes I get my money back but now I have to fill the Gap that I took 6 months preparing for. We can no longer raise our own meat. And I don't necessarily trust what comes from the store.

Normally I would have planted by now. I’m in 6B, we are expecting again 78 degrees this week. I don’t think we’ve had a frost yet, and seem to be in Indian summer. I hope to plant mine in the next week or two. 🧄❤

Sounds great! Yes we're going to be getting a 75 degree day this week, but we've had our killing frost. If it warms up for an extra length of time, mulch it down thickly, and that should do it. 2 years ago, we had that scenario, and it didn't seem to hurt the harvest. Thanks for visiting!!!

I like to leave my sauerkraut on a counter (room temperature) in my kitchen for 2-4 weeks, or until it reaches the flavor I like best. If any mold forms, just remove it. It's not harmful, but it can skeeve some folks out lol. Store for months in a lidded jar in a cold root cellar or fridge. This is a delicious, easy way to get your #fermented vegetables!!
