SSJ3 could’ve beaten fat Buu but Goku chose not to, also the stamina issue of the form was solved in GT when Goku grew his tail back but since GT ain’t canon anymore I don’t if that fact will still hold in Super.

Nah not really Goku did hold back against fat Buu but fat Buu was also holding back when they fought. Also Buu has the superior stamina, regeneration, abilities, durability, endurance etc Goku only advantage is his strength, combat and speed it still at least needs a fusion or spirit bomb to beat fat buu (the weakest of the buus)
