How can you eat such a poor defenceless animal?! Heh. Ok for real the best I've ever had was on the west coast of Canada, northern BC. They used crushed dried corn bread, a really dark porter and cheddar cheese to make a rarebit topping for the oysters before grilling. We had them with local caviar and smoked duck ham as appies.

Great question! If you're pressed for time, 24 hours will still give you great results. But if you’ve got the time to let it go for 3 days.

Hey Brian, here’s a pro tip from our pitmasters: If you don’t have room for a 5-gallon bucket in your fridge, place it in a cooler and pack ice around it completely. If the cooler lid won’t close, no worries-just use enough ice to keep as much of the bucket covered as possible. Also just continuously check to make sure it is cold, adding ice as necessary.
